Eddie Garza, California based chef and Miami chef Fernanda Alvarez will leave a lasting impression with their amazing skills in the kitchen. Los Angeles-based Chef Eddie Garza modernizes the Mexican kitchen by taking it back to its healthy, sustainable plant-based roots. Garza says, "Before the introduction of beef, pork, chicken, and dairy—some of the biggest contributors to climate change and the global health crisis—the staples of Mexico were beans, corn, chilies and other native fruits and vegetables cultivated by indigenous tribes. My mission and vision is to take Mexican food back to its plant-centric roots while maintaining the rich, complex flavors the world has come to love.”
Chef Garza’s culinary roots hail from Guanajuato, Mexico, where he recently launched a plant-based menu at one of the most exclusive hotels, Casa Del Rector. In fact, Garza has worked with a number of establishments throughout Mexico and the US to incorporate more plant-based meals on their menus, and he has led plant-based culinary workshops throughout the Americas. “I try to challenge people to reimagine vegetables as the star of the plate," says Garza. “We owe it to the future inhabitants of this planet to leave the world in better shape than it was left to us.” “I’m thrilled to be hosting this special Mexican brunch in Miami Beach—a place I hold near to my heart,” says Chef Garza.
Being a latino plant-based chef living in the USA has been a challenge and at the same time a blessing.
I feel a huge responsability towards my latino community and feel like I’m the voice in charge of showing them how to follow a healthier lifestyle without altering their traditional flavors since that’s a big part of their heritage but at the same time we have to evolve and become better humans for the planet and future generations.
